Easter Egg & Pretzel Bark

It wasn’t long into our conversation about Easter chocolate that we arrived at what must be a very common question: which came first, the rabbit or the egg? And what do either have to do with Easter?

What does someone do in these situations? Yep, we turned to Google – sorry Siri! – to put us straight. The fascination with eggs is actually pretty logical, they symbolize birth and new life, and so represent the resurrection. But rabbits? And egg-laying rabbits at that?!

This didn’t go unnoticed by the pagans either and they cleverly adopted the frisky bunny to symbolise Eostra, their goddess of spring and fertility. Somehow the two traditions of rabbit and egg became merged in some kinda Easter egg scramble and the story about the Easter Bunny laying eggs and hiding them around the garden came into being – not so crazy after all, huh?

What is most important, is EASTER CHOCOLATE – I’ll take it in an egg, bunny, bar, melted, liquid, or any other shape or form!  So today I’m sharing this delicious Easter Egg & Pretzel Bark. This recipe is super easy and great fun to make with children. It’s only requires 5 ingredients and a microwave, no oven or hob is required. Making this bark is also the perfect opportunity to get creative, so the kids – and you! – can go all Picasso on the presentation!

First, line a baking tray with parchment paper and set it aside for use later. Now pour the milk chocolate chips into one microwaveable bowl and the white chocolate chips into another. Microwave the milk chocolate chips for 1 minute and then stir. Microwave for a further 60 seconds and stir. Continue to microwave in 15 second increments, stirring each time, until the chocolate has completely melted.

easter_egg_pretzel_bark_melting_chocolateMelt the white chocolate chips using the same method. NOTE: white chocolate usually takes less time to melt than milk chocolate, so pay extra attention.

Spread ¾ of the milk chocolate onto the lined baking tray to create a rectangular shape (approximately 9″ x 12″). Then, using a spoon, add small blobs of the melted white chocolate onto the milk chocolate rectangle. Now spoon the leftover milk chocolate into the centre of the white chocolate blobs.

Using a toothpick, run it across the surface of the chocolate in a whirly swirly motion to create a swirly pattern.

Sprinkle the pretzel pieces onto the chocolate, then add the chocolate eggs – I actually used peanut butter chocolate eggs on mine, they were super delicious – and decorate the entire surface with the sprinkles – so fun!

easter_egg_pretzel_bark_finishedChill in the refrigerator until the chocolate has set (approximately 45 minutes). You can break the bark into pieces and serve, but I love to just place the bark on the table and let people break off their own pieces. Any leftovers – what leftovers? – can be stored in an airtight container in the refrigerator.

Ingredients:

12oz Milk Chocolate Chips (or Semi-Sweet)

8oz White Chocolate Chips
1 Cup Mini Chocolate Eggs (or other Easter Chocolate/Candy)
½ Cup Salted Pretzels (broken into pieces)
Easter Coloured Sprinkles, for decoration

Instructions:

Microwave the milk chocolate chips for a further 60 seconds and stir.
